Most platforms add an audit trail when a customer asks for one. By then the shape of the data has already decided what can be proven.

Not your policies. The specific loan, the specific signature, and the specific document the borrower saw.
Every structural problem in point-of-sale home-improvement lending follows from this one fact.
The loan was underwritten against a scope. Then the scope changed, and nobody told the lender.
A per-project cap is trivially defeated by taking more projects.
Application checks answer "did we remember here". That question accumulates with every endpoint you add.
Soft delete is usually half-implemented, and the missing half is the one users notice.
